Mother's Day Feasting - Biang Biang Noodles & Strawberry Cake

I've been making my momma meals for Mother's Day since she once said that restaurants were too busy on this holiday, but this year I wasn't sure what to make. Well, that all changed when I watched the Strictly Dumpling video on how to make Biang Biang Noodles. His version is spicy, so I first made some as an experiment for myself - AND THEY WERE SO DELICIOUS, I knew I was going to build a menu around those noodles for Sunday.



These noodles are fun to make and so delicious to eat - I am now a huge fan. I made one bowl with chili oil as he makes it, and one bowl where I omitted the chili flakes and added peanut butter to the soy sauce and black vinegar combination (it was very good, do a 1:1:1 ratio). Since I didn't have bok choy, I just used bean sprouts and raw cucumbers for some crunch.



I also made some stir fry dishes to go with the noodles - seafood and chicken with celery and carrots, and some marinated steak on top of yuchoy. For the seafood and chicken dish, I marinated the chicken while cooking the veggies first in the wok (since they needed some time to tenderize). Tossed in the chicken and seafood and used mirin, chicken stock, white pepper, oyster sauce, and salt to taste!



The steak marinated overnight in some soy sauce, oyster sauce, sugar, and black vinegar. I cooked it in my dutch oven with some onions, then put it over some garlic yuchoy that was quickly cooked in the wok. Easy peasy!



And my momma being the sweet tooth that she is - had to make some dessert! Since it's strawberry season, I decided to go with a strawberry cake with strawberry buttercream. I used an Add a Pinch recipe for the cake and an All Recipes recipe for the frosting (but added a pinch of salt to really bring out the strawberry flavor). It was a hit!
