Kuo Kitchen - Matcha Chocolate Cups Recipe

Another week, another matcha recipe! Check out my video at the bottom of the post; I ended up filming it while waiting on my Asheville video to load during a rainy day.

Ingredients:


10 oz chocolate wafers

1/2 cup butter, softened

3/4 cup ground almonds

3/4 cup confectioner's sugar

2 tablespoons matcha powder

1 pinch of salt


Directions:


1. Line three 6 cup muffin tins with cupcake liners.


2. Melt half of the chocolate wafers. Evenly distribute the melted chocolate amongst the muffin tins to make a thin layer at the bottom of each cup. Nudge the edges up with a spoon to create the cup for the filling to set into. Chill for 1 hour.


3. Beat the softened butter and gradually add the confectioner's sugar, then matcha. Add in almonds and salt and mix. Taste and adjust according to your preferences. Chill for 30 minutes.


4. Take the matcha mixture and make 18 discs. Fit each disc in a cup and flatten as needed. Put back in the refrigerator.


5. Melt the remaining chocolate.


6. Pour the chocolate over the tops, and shake gently to even them out. Make sure none of the filling is peeking through the top of the chocolate.


7. Chill for another hour, then enjoy!


Hope you enjoy! This was based off a Tasty Japan video that came across my instafeed a while ago (in Japanese, of course). I decided that I loved the idea and instead of using their measurements, I'd come up with my own. You know I am a big believer that you can never have too many matcha recipes! Looking forward to going to Taiwan soon and stocking up on my matcha powder supply.
