Kuo Kitchen - Buttermilk Waffles

Good Morning, foodie friends! Today, we're talking about breakfast and, specifically, breakfast waffles.

When I was working, I had relatively early hours and had to leave my house by around 6....so I generally hit my snooze button for as long as possible and waited until lunch to eat. I used to tell people I'm not much of a breakfast person, but that might have been more of a I'm not a 6 AM kind of person! Now that I wake up a little later, I do enjoy making breakfast...especially since it includes some of my favorite things to cook with - eggs and mushrooms.


BUT. What I really like to do is cook for Mama Kuo, who is a huuge believer in that first meal of the day. In her own words - she "needs to eat". And she's actually the one who requested waffles from me a few months ago (when we discovered we owned a waffle maker), and life - and my flour usage - has never been the same.


I found a fairly simple recipe from Allrecipes and adapted it to suit our tastes. It calls for buttermilk, which I don't believe I'd ever purchased before, and now buttermilk is very much a fridge staple for me. The Kuo Kitchen twist is that Mama Kuo gets cranberry walnut waffles, and HungryDeb gets matcha chocolate chip (or matcha blueberry, as pictured here). Here's the recipe:

Ingredients:

2 cups flour

2 tablespoons white sugar

2 teaspoons baking powder

1 teaspoon baking soda

1/2 teaspoon salt

2 cups buttermilk

1/3 cup melted butter

2 large eggs, beaten

1 teaspoon vanilla extract

*1/2 teaspoon almond extract

*1 tablespoon matcha (if using, you will also need milk and powdered sugar on hand)

*1/4 cup dried cranberries

*1/4 cup chopped walnuts

*handful of chocolate chips or blueberries

Directions:


1. Whisk together the flour, sugar, baking powder, baking soda, and salt in a large bowl until combined.

2. Whisk the buttermilk and butter together in a separate bowl, then add the eggs and whisk until combined.


3. Stir buttermilk mixture into the flour mixture until just combined. If you'd like plain waffles, add the vanilla extract and stir, then cook in your waffle maker. If you want the Kuo special waffles, continue on.


4. Pour half of the mixture back into the bowl used for the buttermilk mixture. This will be the matcha batter. Add the matcha, and a splash of milk or water (since matcha generally makes batters more dense). Add 1-2 tablespoons of powdered sugar and almond extract. Stir until just incorporated, then add the chocolate chips or blueberries (your preference)!


5. Add the vanilla extract to the first bowl, which will be your cranberry and walnut batter. Add the cranberries and walnuts and stir until they're evenly distributed.


6. Cook the waffles in your waffle maker and enjoy!

I hope you enjoy these waffles as much as I do. Actually, I really hope that you love them as much as Mama Kuo does...I made a batch yesterday, and she's already powered through four whole waffles! That is some commitment, as these waffles are pretty hefty.
