Happy Valentine's Day!
If you're looking for an easy DIY sweet treat to make for loved ones (or yourself for some self-appreciation on this day celebrating love), look no further. Or maybe you've come across this post on another day looking for the EASIEST cookie recipe you can find. It is this, a yummy, chewy, chocolate chip cookie that will make you feel like, hey, maybe you CAN bake!
And trust me, I'm constantly on the hunt for recipes like that. My first foray into baking led to many disgusting, burnt, inedible projects that shall not be named, so I feel the struggle. Generally, I much prefer cooking because you can taste as you go and have more control during the process. But I've learnt to appreciate the science behind baking, even if I don't quite have a good grasp on it. And good thing, too, because this recipe doesn't require much of that understanding!
I don't even know how I started the hunt for nutella cookies, but I found several on Kirbie's Cravings. I tried a couple and settled on my favorite, while making a couple of additions/adjustments. Here's the recipe:
Ingredients
2 cups flour
1 teaspoon baking soda
sprinkle of salt
1/2 cup melted butter
2/3 cup sugar
1/2 cup brown sugar
2 large eggs
1 teaspoon almond extract
1/4 cup Nutella
1/2 cup chocolate chips
1/2 cup chopped walnuts
Directions
1. Preheat the oven to 375 degrees and line baking sheets with parchment paper or aluminum foil
2. Whisk together flour, baking soda, and salt in a medium sized bowl
3. In a large bowl, cream the butter and sugars until light brown and fluffy. Add the eggs and almond extract and mix until combined.
4. Add in the flour mixture 1/2 cup at a time. Then add in the Nutella and stir with a spoon or fork until incorporated. Mix in the chocolate chips.
5. Scoop and roll 1 inch balls of dough and drop onto the baking sheets. Press a few walnuts onto the top.
6. Bake for 10 minutes. Remove cookies and let cool on a wire rack.
7. Enjoy! They're best when they're still slightly warm.
Simple and good! I've tested these cookies on many audiences and have received only compliments (except for the time I used ineffective baking soda, but just make sure to buy new baking soda and you won't have that problem). What are some baking recipes you have that are easy and delicious?
