Here's one of two chocolate matcha desserts that I've made this past week (I'll tell you about the other one soon, I promise!). I've always been in awe of crepe cakes ever since I tried one in Flushing, NY, and that love has only increased as my sister introduced me to Lady M cakes. They're so beautiful and delicious - and they just scream time commitment!
Well, now that I have way more time on my hands, I thought it'd be fun to try and tackle a crepe cake. Here's what I'll say - it didn't take AS LONG as I expected it to, but the most frustrating part was figuring out how to make a crepe. Once I got them to be acceptable (I say acceptable because I surely did not master the thinness of the crepes in the cakes you see at shops....but it still was good), it was kind of nice making them.
I used a recipe I found online from Tasty. It's for a chocolate crepe cake with regular whipped cream filling, so I wanted to add a twist (my favorite thing to do) and make the filling matcha whipped cream. So I just bought a container of heavy whipping cream, started going at it with my mixer, added confectioner's sugar, matcha, and vanilla extract. Apologies - I really don't use measurements when making whipped cream. I just kind of taste it as I go.
The recipe was pretty simple to follow. I will admit, I do NOT know how to make ganache, or what the texture is supposed to be - oh, and also, my heavy cream and sugar may have boiled too much? It stayed pretty liquid-y. I wasn't too concerned, though, because honestly - though ugly - it tasted SO good. I started just dipping some of my fail crepes in the ganache and eating them while going through this cake building process.
(Also, I did not count the layers. You KNOW I would've lost count right in the middle!)
So if you have any ganache tips, let me know! And next time you have a whole half-day free, maybe this will be a fun recipe to try. Trust, while this was nowhere near the cakes I've had from dessert shops, I was definitely proud of this little cake - and it got my friends' approval, too! Maybe next time, I'll try an only matcha crepe cake...I LOVE matcha so matcha ;)
